How to save your herbs floating in your fridge and turn them into a delicious base for all your recipes

What you need:

  • All the leftovers herbs in your fridge.
  • 3 garlic cloves chopped.
  • 1/4 of onion chopped.
  • 1 tsp of chilli flakes.
  • 1 tsp of salt.
  • 3 or 4 cups of olive oil (or enough to cover your chopped ingredients). The process is very easy:

Rinse and dry your herbs and chop them thinly (I used parsley, dill and thyme because that’s what I had in my fridge).

Peel and chop garlic and onion. Mix all the rest of the ingredients together.
If you have ice cube trays use them! Simply pour in the mix, freeze it and take out a cube every time you need.

If you don’t have Ice cube trays you can pour the whole mix in one or more food containers previously lined with some cling film. Freeze your mix overnight and in the morning cut it in small cubes (warm up the point of your knife in some hot water)then put them back in the freezer using freezing bags.

This is a perfect way to keep your herbs fresh and give all your dishes a tasty kick!
